French Dressing
Anchovy Dressing
Salad Cream
Mayonnaise


French Dressing

INGREDIENTS

2 tablespoons white wine vinegar
2 tablespoons olive oil
1 teaspoon sugar

METHOD

1. Mix well together.
2. Sprinkle over salad.


Anchovy Dressing

INGREDIENTS

1 tablespoon lemon juice
2 ounces or 55 grams parmesen cheese - grated
1 egg
½ teaspoon mustard power
1 tablespoon white wine vinegar
2 slices red onion - chopped
1 teaspoon anchovy paste or essence
6 tablespoons olive oil

METHOD

1. Put the egg in cold water, bring to the boil.
2. Boil for 1 minute, plunge into cold water and remove the shell.
3. Put all the ingredients in a blender and mix until the mixture thickens.


Salad Cream

Makes ½ pint or 300 ml. approx.

INGREDIENTS

1 egg
3 tablespoons white wine vinegar
1 level teaspoon mustard powder
2 level teaspoons sugar
⅛ teaspoon salt
⅛ teaspoon pepper
¼ pint (150 ml.) sunflower or olive oil
4 tablespoons (65 ml.) double or reduced fat cream

METHOD

Use Blender or Liquidiser

1. Put egg in pan. Cover with cold water.
2. Bring to boil. Boil for 1 minute.
3. Place egg in cold water. Remove egg from pan and peel.
4. Put egg, vinegar, mustard, sugar, salt and pepper into a liquidiser or blender.
5. Blend on medium speed.
6. Pour the oil slowly through the centre hole in lid of the blender.
7. When thick add the cream and mix thoroughly.
8. Add 1 tablespoon of boiling water and mix thoroughly. This helps to keep the salad cream for several weeks.
9. Pour into a suitable container and allow to cool.
10. Store in refrigerator.


Mayonnaise

Makes ½ pint or 300 ml. approx.

INGREDIENTS

½ pint or 300 ml. olive oil
1 egg
2 or 3 dessertspoons white wine vinegar or lemon juice
½ teaspoon salt
1 teaspoon sugar
¼ teaspoon dry mustard
¼ teaspoon pepper

METHOD

Use Blender or Liquidiser

1. Place all ingredients except oil into liquidiser, and switch on to speed 1.
2. Remove centre cap from lid and slowly pour the oil onto the mixture until it thickens.
3. Store in refrigerator.
